Blackberry Crescent Pastries

I had full intention yesterday morning to try this pin out.

But then I thought about having to unwrap all the fruit roll-ups...so I made up my own yummy dessertish breakfast.


Super-duper simple!


And very yummy!


Oozing blackberry jam & powdered sugar is making my mouth water....


Blackberry Crescent Pastries

Ingredients:

·         1 can of Crescent Rolls

·         Blackberry Jam

·         Powdered Sugar

Directions:

1.       Preheat oven to 375˚.  Either line a baking sheet with a silicone baking mat or some parchment paper.

2.       Roll out the can of crescent rolls, so it’s essentially a big rectangle.

3.       Spread Blackberry Jam all over.

4.       Roll up each section into the crescent roll shape.

5.       Bake for 11 minutes.

6.       Let cool for 5 minutes…especially for little mouths.

7.       Sprinkle with powdered sugar and enjoy!

Crazy Cooking Challenge : Blueberry Coconut Lime Puffins

It's Blueberry Muffin Time!!!!

And let me tell ya....I baked alot of blueberry muffin recipes in my hopes of finding the best muffin recipe.  Because you see....in my search over the years to find a great blueberry muffin recipe, I've never been won over.  I'd still rather buy a muffin mix {Betty Crocker is my favorite}.

And then I ran into this recipe...and I think that my husband & I are hooked {because my kids have given up on muffins...I don't think they appreciated this challenge}.


That's right folks....it's a Muffin & a Pancake...and it totally tastes that way.

So I took the idea of this Puffin from the blog, Lady with the Red Rocker, and then I ran with it.  I added some Coconut Syrup {all the way from Hawaii} & some lime zest, and of course some Blueberries.

The coconut added this suprise flavor....my husband had a hard time guessing what was in the muffin.  And do you know what my favorite part of these muffins are???  The fact that they are just about 100 calories each.  EACH.  How awesome is that!


Blueberry Coconut Lime Puffins
 
Ingredients:
·         2 Cups Krusteazs Mix
·         2/3 Cups Skim Milk
·         2 Eggs
·         ½ Cup Coconut Syrup
·         1 Tbl Coconut Emulsion
·         Zest from 2 Limes
·         12 Tbl Blueberries
Directions:
1.       Preheat Oven to 375˚; grease a 12 cup muffin tin.
2.       In a mixing bowl, add the following ingredients: Krusteazs mix, milk, eggs, syrup, emulsion, lime zest.  Gently mix everything together.
3.       Scoop into the muffin pan.
4.       Place a tablespoon of blueberries on top, and gently press down.
5.       Bake for 15 -20 minutes when a toothpick comes out clean.
6.       Enjoy

Apple Pie Eggrolls

I wanted to share a yummy treat I made for myself over the weekend.  If you've hung around here for awhile, you know that I love baked apples.  So when I found this genius recipe, over at A Crafty Cook, when I was on Pinterest, I knew I had to try it out!


hmmmm....Yummo!  Nothin' better than some baked apples & caramel sauce!


Here's how I made mine!

Apple Pie Eggrolls


Ingredients:
  • 3 Apples-peeled & diced
  • 1/3 Cup of Sugar
  • 1/2 tsp of Cinnamon
  • 8 Eggroll Wrappers
  • Water
  • 1 Egg
  • Sugar

Directions:
  1. Preheat the oven to 400 degrees F.
  2. Combine your apples, 1/3 cup of sugar, & cinnamon together.
  3. Lay out your wrapper in a diamond shape.  Spoon some apple filling towards the middle.  Wipe the edges of the wrapper with some water.  Fold up and place on a baking sheet.
  4. Make an eggwash & use it to brush the tops of the eggrolls.  Sprinkle sugar on top.
  5. Bake in the oven for 15-20 minutes, or until golden brown.
  6. Let cool, and serve with caramel sauce & even vanilla ice cream!
  7. Enjoy!
