I made these Sunday....my mouth is still sad that they are gone.


I may have made a ton of these, but it only took me 3 days to finish them off {well, I guess my hubby helped too}.


I had this idea of shooting pictures of myself.  It didn't turn out the way that I imagined.  I really tried though.


And to finish off the week....A little spectating.

Cranberry Raisen Bran Muffins

I like muffins.

If I'm a good Mommy, I'll make them on the weekends as a special breakfast treat.

On Monday, over at A Southern Fairytale, Rachel posted a recipe for her Cranberry Raisen Bran Muffins, and something clicked-they sounded so yummy.

I've never made Bran muffins before, so I was interested to see how they would turn out.


I really enjoyed them.  The addition of the craisens mixed in with the raisens made them just a tad bit sweeter.  Plus, how could I go wrong with these yummies....they've got fiber baby!  And fiber is a good thing to this lady; especially when you're trying to lose/maintain your weight.


I'll just have to say though, the recipe said that it would yield 2 dozen muffins and I ended up making 4 dozen muffins.  But it was all good.  I made these babies for a family dinner, so we ate some, I sent home some, and now I have some to enjoy the rest of the week.

Cranberry Orange Scones

I don't remember if I saw her making these or if I had put "Scones" into the search index at FoodNetwork.com, either way these scones were fabulous!


The flavoring was spot on.  Then again, how can you go wrong with cranberry & orange.  I mean, Great Harvest makes a great bread loaf out of those two flavors.


I was worried though when making the dough.  I followed the directions as written.  The dough was wet; more wet than I thought it would be.  It took some flour kneaded in to make it good enough to roll out.  I'm just happy that I had a dough scraper-it helped.


I think the topping of an orange glaze completed the entire scones.  These scones were moist on the inside & not at all bisquit like {because when you think about it, the ingredients resemble those of bisquit ingredients}. 

This recipe made more than the 14-16 scones it says on the recipe.  I think I made 3 dozen scones, but that could have been the size I was making them.

Chicken Nuggets

When I was putting together our family's two week menu, I asked for input.  My middle son Jaxson wanted to have Chicken Nuggets.

Well ok Mister.  We'll have Chicken Nuggets.

Now would it have been super-duper easy to just buy a bag of nuggets at the store & reheat the suckers.  Well, yeah, but it wouldn't have been that healthy.  And with the lovely spring weather & forthcoming summer weather, healthy food is where it's at.

Super Easy, these nuggets were to make.

Do you have CHICKEN?

Do you have BREAD CRUMBS?

Do you have PARMESAN CHEESE?

If you do, then you can make these yummy nuggets of moist goodness.


First off, I took my chicken and cut them into cubes.

In a plastic bag, I put about a cup of breadcrumbs with 1/4 cup of parmesan cheese.

I then put the chicken into the bread mixture & shook the bag like crazy.  We're shakin' & bakin' here.

I then put the chicken onto a baking sheet lined with foil {for easy cleanup} {I also sprayed the foil with cooking spray so it wouldn't stick} and stuck it in the oven for 20 minutes @425 degrees.


Yummy moist nuggets of goodness.

Paired with some yummy sauces & veggies, it was a great easy dinner
