Raisen CousCous
Today, I'm sharing a very yummy side dish that I made to go along with my Coconut-Curry Chicken...CousCous!
My Kids LOVE CousCous....it's one of our favorite side dishes. I love it even more because it's so easy to prepare; I mean, you can't go wrong with 5 minutes of "cook" time.
With one of our favorite Chicken Curry dishes, there are raisens in the sauce, and since I was reconstructing the chicken dish, I thought to add the raisens somewhere else. Also, by letting the raisens soak with the CousCous in the water, they were able to plump up a bit.
Raisen CousCous
Ingredients
·
2 Cups of Water
·
1 tsp of Chicken Bouillon
·
1 ½ Cups of CousCous
·
½ Cup of Raisens {any kind will work}
·
Parsley {optional}
·
EVOO
Directions
1.
In a microwave safe bowl, heat up water and
chicken bouillon till boiling.
2.
Stir in CousCous & Raisens. Cover with plastic wrap & let sit for 5
minutes.
3.
Fluff with a fork, and if you’ve got fresh
Parsley, mix that in. Drizzle a little
bit of EVOO to finish it off.
4.

Coconut-Curry Chicken
Curry Chicken has been on my mind. So I decided to switch up my regular recipe....this time I threw coconut into the mix.
I sliced up strips of chicken, coated them with a curry yogurt, and then covered them with shredded coconut. The vanilla yogurt & the sweet coconut complimented each other so well.
After baking in the oven for 35 minutes, they came out with a nice crispy crust.
Coconut Curry Chicken
Ingredients

1
½ -2lbs of Chicken Breast-sliced into strips
·
1
Cup of Vanilla Yogurt
·
1
Tbl of Curry Powder
·
3
Cups of Shredded Coconut
Directions
1.
Preheat
oven to 375˚
2.
Set
up a breading stations: 1 Pan with the Yogurt & Curry Powder-mixed
together, and another Pan with the coconut.
3.
Coat
each piece of chicken with the yogurt sauce, followed by a coating of
coconut. Place on a baking sheet lined
with parchment paper {makes clean-up easier}.
4.
Bake
in the oven for 35 minutes or until the outsides of the chicken are a golden
brown.
5.
Enjoy!

DIY Washcloth Toothbrush Pouch
A week or so ago, my Fabulous friend Emily, shared this tutorial on making a Traveling Toothbrush Pouch.
I immediately loved the idea. LOVED.
So the next time that I was at Ross's, I picked up some washclothes {I grabbed a pack of 8 making each washclothe 50 cents!}, and went to work.
These were super easy to make, and I was lucky that I had lots of ribbon to match. I used a different kind of ribbon for each person in my family.
I love how they turned out, and I'm excited to use them on our forthcoming trip to CALIFORNIA!!!

Challah Bread
So...remember the grilled cheese sandwich that I made for the Crazy Cooking Challenge???
Remember how I said that I made my own Challah bread for that Challenge???
Well today, I'm going to share with you the recipe for this fabulous bread! It was super simple to make, so don't fret.
I found the recipe out of this book:
It's kind of an old school book but I use it every once and awhile when I'm looking to try something new in the baking department.
Instead of typing out the recipe, I figured it would be easier to scan it, and post it as a picture. I actually followed the recipe, suprise, suprise.
